There should be a few lists in the archives but here are some ideas right off:  Look at Billings’ “Easter Anthem”, Pachelbel’s cantata “Christ Lag” and Tompkins’ verse anthem “Christ Rising Again.”   Of course, Bach’s “Christ Lag In Todesbanden” (BWV 4) and Pinkham’s “Easter Cantata” are really tough but very, very rewarding!

I second the Billings. Fun to sing, fun to listen to, gets the message of the day across clearly and succinctly, and a nice Early American sound that isn't done often. "Hallelujah Amen!" from Judas Maccabeus while not an Easter piece per say would work for Easter. Also, there are several arrangements of "Thine Is The Glory"/"Thine Be The Glory" out there, that while not really classical, make good use of a good Baroque motive with a nice Easter text.

Thanks so much.  Will look at all these.

If by classical you mean in the broad sense, artfully-crafted, choral in concept, and  with an excellent Resurrection text...
K. Lee Scott - Joy to the Heart and Now Glad of Heart.
This year I will likely do Dan Forrest's "Arise My Soul, Arise"... gorgeous tune, great Wesley text... starts in a devotional mode, but builds to a full-throated peak without the overdone fanfare.  A good choir will love it, and Dan writes a melody that most everyone wants to hear. Mind you, we will make lots of noise through the rest of the morning, so this devotional moment will probably be just right for us.

Denise. You could look at Christ the Lord is risen again by Philip Stopford.
Published by Morning Star.
Commissioned by the Ulster Society of Organists & Choirmasters, it is an anthem for SATB and organ that is most impressive even with modest resources.
