Seeking original Winter-themed songs/carols by Minnesota composers

Hi everyone! 
I'm charged with programming a special winter concert at The Schubert Club in St Paul, MN and seek your recommendations for scores with these specifications:
 
Theme: Original carols or Winter-themed songs
Composers: Must have ties to Minnesota (born in, raised in, perhaps educated in... loose ties are ok but stronger ones will get priority).
Forces available: 4 professional singers & one obbligato instrument (instrument to be determined based on submissions)
Voicing: SATB or SSAA or  a subset of either quartet (solo w/piano, TB duet w/harp, SSA trio, etc are all welcome!)
Duration: up to 5 min.
 
NOTE:  We are not seeking arrangements of previously-existing tunes (i.e. no carol arrangements).  But new settings of previously-existing carol texts are welcome.
 
Our four singers are stylistic versatile, so we're looking for a variety of styles and moods to show them off.  Last year's program -- which was so lovely -- included works by Stephen Paulus, Dave Frishberg, and Trip Shakespeare.
 
Composers of the pieces programmed will be encouraged to attend the concert (noon on Dec 18, 2014) and to briefly address the audience from stage. Composers will also receive an audio recording of their piece.

PS: We've been doing this concert annually for the last few seasons, so if you see this message after Sept 1, 2014, feel free to send me a note anyway.  It's likely I'll still be pounding the pavement looking for ideas for future seasons.  :)
