Karen MerkleyTuimbe and O Sifuni Mungu are always hits with my kiddos. Perfectly accessible for your newbies, but not exactly easy if you emphasize technique (not to mention using another language). Plus, for your really advanced singers, you could have them learn the percussion parts.

Chris FowlerThere is a little known piece by Buryl Red called "The Rain of Peace" that I used early in my career that worked well with SAB groups. It's probably out of print, but you might be able to contact the publisher for reprinted copies.

Adam WintersSwing Down Ezekiel by Greg Gilpin would be a fun closer that comes in SAB and other voicings. Very repetitive, but fun. The Journey by Tom Fettke also comes in SAB if I remember correctly. It combines Simple Gifts and Dvorak's Largo.
