Tom KlonglerFor SSA - Mendelssohns Laudate Pueri Dominum. Pretty polyphonic, but Kids have enjoyed it and sang it well for me in years past. Pseudo yok - lite by Mäntjarvi is pretty fun too and is available in SSA and SATB arrangements. Not easy, but I think it is relatively accessible. Can't go wrong with Fauré's Cantique de Jean Racin for SATB. There is a cool Spanish piece I did a few years ago called "el cielo canta la grilla" but I can think of the composer off the top of my head. Very accessible and quite fun! Check out some compositions by Braeden Ayers too; he has some great tunes with world music flair to them.
