Yoel,   A couple of options: Holst's "Choral Hymns of the Rig Veda" comes in a number of manifestations and are stunning settings of Hindu Vedic texts.  Similar in the realm of Non-Western mysticism if Adolphus Hailstork's "Seven Songs of the Rubaiyat:" settings of the well-known Sufi poems....
