Augsburg published a collection of American carols that is user friendly. *The Carolers' Handbook* (CPP/Belwin/Warner) has a few new arrangements of old favorites, but is primarily pops/secular tunes, and all a cappella. I use it all the time for caroling gigs. Have you tried the Fissinger arrangements? Check out "A Stephen Paulus Christmas" all choral arrangements of familiar carols--some with instruments, some a capella.
